Various people / societies live on different levels, yet all of them have the first and fundamental level in common: physiological needs – which, as Maslow describes it, include nutrition. As hoteliers, it is our duty to cater to customers of all different “levels” (ie those who only crave for a physiological satisfaction or those for whom eating is a symbol of esteem (bring on the caviar!), all within a management philosophy on a local-, and corporate company objectives on a global scale. If we throw into this the physical infrastructure of our hotel and economic climate & environment of the country we live in, you’re in for a lot of variables – especially when it comes down to details like food & beverage items for a meeting coffee break!
