Efect of drying processes on free acidity content of cocoa beans: Free acidity contents resulted from each drying method are presented in Fig. 3. While the combination of sun and artificial drying process increased the free acidity content to 3.4 meq of NaOH.10G1 g, only solar drying (C14) and artificial drying (EV34) process had no effect on the free acidity content in comparison to the standard drying process.
