The study performed to determine film forming conditions showed that at least 4% banana flour content and 30% glycerol content were required to form flexible films.
Banana films were slightly yellow, scattered with small black spots from seeds and presented favorable banana
smell. Addition of plasticizer produced more flexible films, while addition of pectin provided more transparent films.
The average thickness of the banana films when 3 g of solids were pour in each casting plate was 0.19 ± 0.02 mm.
