The anti-oxidative capacity of wate

The anti-oxidative capacity of water soluble fractions
was measured by means of the ABTSþ (2,20-azinobis-
(ethyl-benzothiazoline-6-sulphonate) diammonium salt;
(Sigma)) radical cation assay according to Miller, Rice-
Evans, Davies, Gopinathan, and Milner (1993). Trolox
equivalent antioxidant capacity (TEAC index) was
calculated as the concentration (mM) of Trolox in
phosphate buffer showing an antioxidative potential
equivalent to the same volume of juice in the 15th reaction
minute.
