2.7. Statistical analysis
Each processing condition was assayed in triplicate and
determinations were also performed in triplicate.
Analysis of variance was used to determine the effect of
processing factors on vitamin C and antioxidant capacity
of orange juice and gazpacho. The least square difference
(LSD) test was employed to determine differences among
the treatments (p < 0.05). Statistical analysis was performed
with the Statgraphics plus version 5.1 for Windows
package (Statistical Graphics Co., Rockville, MD, USA).
