Color
The instrumental measurement of banana flour
color was carried out with a Colorimeter Minolta
CM-3500d (Minolta, Spectrophotometer, USA) and
the results were expressed in accordance with the
CIELAB system with reference to illuminant D65
and a visual angle of 10o
. The measurements were
performed through a 6.4-mm-diameter diaphragm
with an optical glass, placing the flour directly on the
glass. The parameters determined were L* (L* = 0
[black] and L* = 100 [white]), a* (−a* = greenness
and +a* = redness), b* (−b* = blueness and +b* =
yellowness).
