An interactive effect was noted between
temperature and concentration of acid in that growth was inhibited with decreasing concentrations
of acid and temperatures. The MIC was determined to be 35 mM (pH 5.25) at 35°C, 32 mM (pH
5.4) at 20°C, and 28 mM (pH 5.55) at 5°C. Sodium diacetate was more effective than acetic acid,
and the inhibitory effect was attributed to the diacetate moiety rather than pH alone.
