For B. cereus, concentrations greater than 105 organisms/g are usually
discussed as an infective dose. B. cytotoxicus was initially found in a
concentration of 3 × 105 cfu/g in vegetable puree involved in a fatal
outbreak in a nursing home for elderly people in 1998 (Lund et al.,
2000). In our study, B. cytotoxicus was not detected in concentrations
exceeding 3 × 102 cfu/g. However, there is no data available on the
minimum number of B. cytotoxicus needed to cause human illness.
