In this study, different colored of Thai rice grain for health cultivars, geminated brown rice (brownish), geminated parboiled rice (pale yellow), geminated red rice (red), geminated black rice (black) and Kao Mao (green rice) were examined for total phenolic, GABA contenets and antioxidant activities. The rice seed samples were firstly subjected to solvent extraction using ethanol. The total phenolic content of the extracts was analysed by Folin-Ciocalteau method and GABA content using γ-aminobutyric acid method. The antioxidant activities was assayed by 1, 1-diphenyl-2-picrylhydrasyl (DPPH) and FRAP method. The results indicated that the germinated black rice (black) extract showed the highest values of total phenolic content (5.960.39 mg GAE/g of sample) and the GABA content (15.610.28µg GABA/g of sample). The germinated black rice (black) extracts also showed the highest potential in scavenging DPPH radicals and calculated in terms of IC50 (1. 470.440.048 mg/mL). In the FRAP assay, the extract of germinated black rice showed the highest activity (192.160.36 mM Fe(II) In conclusion, all colored seed rice for health cultivars had a strong antioxidant activity. These findings suggest that should be developed further to be useful in food industry or health products.
