SDS reduced the particle size in SM-ice cream ( P < .0001 ) (Fig. 1a). Given that % PKO affected the quantity of aggregation ( P < .0001), an interaction between SDS and % PKO (P < .001) shows that larger aggregation favors a more pronounced effect of SDS. In other words, at lager particle size, there is break-up of a greater amount of partially coalesced droplets.
