The application of the SPI-BW coating amended with 0.5% Cys significantly affected the visual quality of fresh-cut eggplants
(Table 2).
Uncoated samples were evaluated to be below the limit of marketability by storage day 1, except for those stored in a passive modified atmosphere, which reached this limit by storage day 2 (Fig. 3).
The samples coated and stored under atmospheric conditions (Control) reached the limit of marketability by storage day
6 at 5 ◦ C in accordance with the highest WI for this treatment(Fig. 1).
