The raw fish dish in Binh Dinh area is prepared from live fish. Live fish bought on the local market (Fig. 2) is washed several times with fresh water before being transferred into a big bowl or plate; next the consumer picks up a fish into a small bowl adding lemon, chilliand some spices; ‘cooked’ live fish is now ready for consumption.Fish is thus never cut and consequently kitchen materials are not contaminated with metacercariae.
