One of the first initiatives in the 1990s was the introduction of microwave boiling of the frozen fish. This gave a better product
quality and reduced the levels of energy – partly due to the microwave oven itself and partly due to the savings on ventilation. However, the microwave technology did not become a success because of the difficulties related to the handling of different sizes of fish at the same time [23].
