To investigate the effect of starch concentration on the mobility of water molecules, the slurries containing different concentrations of corn starch were incubated at 90 C for 1 h, and then the T2 values of these starch pastes were determined. As shown in Fig. 5, with the increase in starch concentration, the T2 values decreased gradually, suggesting that the pastes with a high starch concentration had lower water molecule mobilities.
