Dear Ms Serene Zhou, I apologise for the long waiting time, which was 1 hour 15 minutes actually. But I believe that one of my team members did explain to you when you were seated that the food would take awhile because we were short-handed. Yes I agree that to wait 1 hour 15 minutes for all your dishes to arrive is a long time. However, there were 2 other tables in front of you, and we would have to complete their orders first. We seek your kind understanding in this matter. Due to numerous circumstances, we are unable to eliminate the problem of "lack of staff" at this point, but we will definitely aim to reduce the inconvenience to our customers by informing them at the point of ordering that the dishes would take awhile. Customers would be able to decide for themselves then if they would like to wait.
With regards to the unavailability of certain dishes, we cannot guarantee that we have all the dishes all the time because our the ingredients may run out of stock. For instance, we could have sour mangoes that are not ripe, or seafood that is not good enough from the market.
Our portions for the dishes are not big so that customers get a chance to sample a variety of dishes. My team would, based on customers' orders, suggest to add or to remove dishes depending on the number of people. I have done a lot of market research and believe that our price to portion ratio is definitely within the "reasonable" range.
We served about 15 other servings of clams from the same batch. There were no complains. Perhaps somehow, unfortunately, you happened to get a large handful of clams that were empty. Most clam meat would have dropped out of the shell and fall into the sauce during the cooking process actually. My stand is that we would change a dish if a customer does not like it regardless of any reason if a complaint or any small feedback was made in the restaurant.
The fried rice is definitely one bowl. It is one small bowl that we used for all our fried rice. It is the same bowl that we had used to serve about 1856 portions(as of now) of fried rice.
Lastly, with regards to service charge. I have attached the receipts from your table(table 3), as well as the receipts that were before, and after you. We do charge service charge to all customers with effect from 20/8/2014.
As to why your GROUPON voucher did not include the service charge, and that you claimed that there was no mention of it anywhere, I have attached, and highlighted the part that you missed out. 5 points below the highlighted point, there is also another mention on service charge. Let me know if you have trouble finding the page. I would screen shot a step by step instruction to assist you.
My team informed you at the point of being seated/ordering that the food would take awhile, and you decided that you could wait. The total price you paid for, including the GROUPON voucher of $80 (which was sold at $37.90), is actually $51.84. (You did leave us a $0.06 tip which I sincerely thank you for.) The portions are not big but you did order 6 dishes, which included 2 large portions, and a whole fish for $51.84.
Because we are new, I sincerely, and wholeheartedly appreciate customers' feedback, both positive and negative. However, it has to be within reasonable. Keeping quiet at the restaurant, and posting your unhappiness on Rochor Thai's FaceBook page is uncalled for.
