My first introduction to making great paella was from a cooking class I attended taught by a Spanish chef who was very knowledgeable about this flavorful dish. To sum it up in a nutshell, paella is a one- pot rice dish, made with fresh fish and seafood, which can consist of shrimp, mussels, squid and can even include the addition of chicken and sausage. Flavors of chicken and seafood stock are added to the dish, along with tomatoes, garlic, and onions and of course the signature herb, saffron.
