Finally, 10 commonly used kinetic models were examinedwith the current experimental data. Results showed that all mod-els, one-step or three-step, reversible or irreversible, first-orderor higher-order, worked well in fitting the experimental data.Among them the three-step second order reversible model (Model#2) fits the data the best. Reaction rate constants and activationenergies for all reaction models were determined, and the acti-vation energy for the simple one-step reaction (uME → ME, andTG → GL) compared well with literature data. In Model #2, theactivation energies for step DG → MG and MG → GL were higherthan step TG → DG, which shows that transesterification reactionsof diglycerides and monoglycerides are more difficult than fortriglycerides.
