The objective of this work was to study the effects of freezing
and time on crushed fresh products (minimally processed) as well
as storage temperature (20 and 70 C) on the mass fraction of
a- and b-carotene, b-cryptoxanthin, lycopene, lutein and zeaxanthin.
The stability of carotenoid working standards in an organic
solution (HPLC mobile phase) at 70 C was also evaluated with
the aim of reducing the costs of analysis without compromising
the quality of the results. Measurement uncertainty was considered
in both scenarios.
