In the case of peppers coated with the coating with extract addition, a significant decrease (p < 0.05) in color brightness was found. The extract made the coating darker and duller, thus effecting a change in material surface brightness. An increase in gloss after coating application was also confirmed in another study conducted by Gounga et al. (2008), who reported that fruit coated with whey protein isolate-pullulan coating were much glossier and had a slightly brighter shade. A significant decrease (p < 0.05) in L* parameter value, i.e. material darkening, was only noted in the control samples (uncoatedones) after the storage period.
