Sampling
The sampling site of M. biceps femoris was standardized across
breeds and ages. Approximately 30 to 60 g of M. biceps femoris was
sampled 5 d post mortem. Samples were selected from 8 different
animals in each study group and used for fractionation and fatty
acid analysis of their IMF. The samples were vacuum-packaged
and kept at 4 °C for 2 d before being stored at −80 °C until
analysis.
Dry matter determination
The mass fraction of drymatter (DM) was determined by drying
approximately 5 g of M. biceps femoris at 105 °C for 24 h and
weighing.
