The jack fruit takes about 20 days for the flowers to successfully undergo the process of anthesis and become 6 in fruit set. It takes about 95 days to mature form 6 in Fruit set and is then ready to be harvested. Three batches of fruit were obtained from the same farm within the same season. Fruit were then allowed to ripen at ambient temperature (+,- 28 Celsius degree ; 70-75 % RH) . Analyses were carried out on fruit at days 1, 3, 5 and 6 after harvest. In each batch, two fruit were cut on the selected days. Fruit were cleaned and cut into three equal top, middle ant bottom portions. The fruit bulbs from each portion were removed and deseeded prior to analysis. Samples from each portion were randomly selected from the two fruit for chemical analysis. Chemical analyses were carried out in triplicate for each batch.
