4. Conclusion
The production of MRPs derived from ten different model systems processed using dry heat yielded different capacities to scavenge ROS; a finding that was closely associated with generation of brown color pigments common to intermediate-to-late stages of the reaction. ROS activity was influenced mostly by the type of sugar used in the reaction. In comparison, the capacity of MRP to scavenge RNS was dependent not only on the properties of individual model systems but also the reaction conditions used to generate MRPs.
