High peroxide values indicate that somehow the oil was exposed to oxidative process either during the preparation of the raw material, extraction or storage of the oil. The refractive index is mainly related to the saturation degree and the ratio of fatty acids cis and trans double bonds, besides it is influenced by oxidative processes. In the analyzed oils, the refractive indices at 40◦C were 1.4653 for the pulp and 1.4655 for the seed. These values are consistent with those found for conventional oils such as cotton (1.458–1.466) and maize (1.465–1.468) (Codex Alimentarius Committee, 2009).
