The manufacturing of acid hydrolysates requires glass lined stainless steel reactors
that can withstand high pressure and temperatures. Equally important are the safety
procedures built around these processes. The governing factors for acid hydrolysis are
the concentration and type of acid (hydrochloric acid or sulfuric acid), temperature
(250–280°F), pressure (32–45 psi), time of hydrolysis (2–8 h) and the concentration
of protein (50–65%). All of these independently and combined will have an impact
on quality of the product.
