2.9. Sensory evaluation
Affective test was done by 35 consumers comprising of 30 females and 5 males, 20e45 years old. The OS400EE/K cake sample was cut in to small cube (30 30 30 mm3) and rest for 30 min at room temperature to allow equilibration of volatile compounds. Appearance, flavor, texture and overall acceptance were evaluated in 7-point hedonic scale.
