From an allergenic point of view plant nsLTPs belong to the
large Prolamin protein superfamily, which includes several
allergen families (Egger et al., 2010). Their most common route of
exposure is ingestion (see the AllFam Database of Allergene Families
at http://www.meduniwien.ac.at/allergens/allfam/). Allergens
of the Prolamin superfamily share a conserved scaffold consisting
of bundles of four a-helices stabilized by four disulfide bridges
(Egger et al., 2010). This compact structure is usually evoked to
explain the persistence of allergenicity for cooked food proteins
