Your firm's HACCP plan for "Tuna in Pouch for Human Food" lists inappropriate
corrective actions at the "CCP 1 -Receiving Frozen Tuna" critical control point
addressing the histamine content element. The listed corrective actions limit or
minimize rejection of incoming raw fish from a harvest vessel that do not meet your
firm 's critical limit. With the adjustments made within the December 1, 2014 revised
HACCP plan, only the species in which the elevated histamine happened to be
detected is to be rejected. Other species from the same harvest vessel that have
potentially been exposed to the same abusive conditions will be accepted according to your firm's HACCP plan, provided the small sample results failed to detect elevated
histamine in other species as well. Your corrective action does not provide a means
for obtaining the necessary additional assurance that the conditions that affected one
lot did not extend to other lots (i.e., species) handled aboard that vessel.
