Samples were treated in triplicate by high pressure three days after production in a 50-L horizontal high pressure pilot unit (ACB Pressure System, Nantes, France). For convenience, the day of the high pressure treatment was identified as day 0. The pressure-transmitting fluid used was water. The samples previously held at 4 °C during storage were inserted into the pressurizing chamber filled with water at 15 ± 1 °C and exposed to a pressure of 500 MPa for 5 min. The compression rate was set to 8 MPa•s−1 and decompression was nearly instanta-neous. During high-pressure (HPP) treatment, the product temperature in the pressure chamber increased because of the adiabatic heating. However the maximum product temperature reached at the end of the treatment was 10.5 °C.
