In plants (A, C, E and G) using wheat flour as a raw material, the
numbers for APCs (1.1e2.6 log CFU/g, mean of 7 plants = 1.9 log
CFU/g), LAB (ND or 2.1 log CFU/g in plant G), fungi (ND or 2.7 log
CFU/g in plant G) were generally lower than in those using rice.
AAB, coliforms and B. cereus were not detected in any wheat flour
sample.
