2.5. DPPH radical scavenging activity
Free radical scavenging activity was measured by 1,1-
diphenyl-2-picrylhydrazyl (DPPH) by method of Shimada,
Fujikawa, Yahara, and Nakamura (1992). Different concentrations
(50, 100 and 200 ppm) of coffee conserves and
BHA were taken in different test tubes. The volume was
adjusted to 100 ll by adding MeOH. Five milliliter of a
0.1 mM methanol solution of DPPH was added to these
test tubes and shaken vigorously. The tubes were then incu-
