In recent years the management and co‐ordination of the supply chain for fresh produce has become increasingly important as companies need to minimize distribution and inventory costs and maximize market opportunities which result from fundamental changes in consumer preferences and tastes. The major benefits for the consumer are thought to be better availability, less out of stocks, fresher produce with a longer shelf‐life, and potential cost savings.
Retailers are attempting to smooth the supply chain by buying centrally. This buying strategy is beneficial to the retailer, resulting in economies of scale and a reduction in the number of suppliers for much of the produce they purchase. Improvements in the supply side and certain demand requirements create the need for large retailers to deal with organizations which are able to supply on a year‐round basis with a full range of produce. As large companies are able to concentrate their buying efforts and understand and influence the source of production, their knowledge of the supply chain grows, allowing end‐to‐end visibility of the logistics pipeline, from order through to delivery.
