Kerkhofs et al. (2005) and Toor and Savage (2006) reported that
the antioxidant activity decreased in proportion to the loss of phenolic
content and AA content. We also believe that a decrease in
antioxidant activity in our samples may have been due to the lower
levels of AA and phenolic content. However, it can be said that the
reason for the increase in CUPRAC values of freeze dried samples
might be due to increased extraction efficiency and reduced losses
of components with antioxidant activity.
