Determination of anti-lipid peroxidation in cell-
free system—The inhibition of lipid peroxidation was
evaluated by measuring the formation of
malondialdehyde (MDA), a secondary end product
from the oxidation of polyunsaturated fatty acid, as
previously described23. A total volume of 500 of
yolk suspension was mixed with 250 of TSCEs at
various concentrations and 500 of 24 mM FeSO4
in PBS, incubated at 37 for 15 min. A volume of
500 of 20% TCA was further added to stop the
reaction followed by the addition of 1 ml of 0.8%
TBA at 100 for 15 min, cooled and centrifuged at
3600 rpm for 10 min to precipitate proteins. An
absorbance of the coloured upper layer was measured
at 532 nm. The inhibition of lipid peroxidation was
calculated using the following equation:
