Selection of starter cultures
Proper selection of acid tolerant strains of AB-cultures capable of progression in low pH yogurt will ensure better survival of the organisms in the bio-yogurt (Martin & Chou, 1992). Using ABT-cultures (L. acidophilus, B. bifidum and S. thermophilus), and the exclusion of L. bulgaricus from fermentation, will eliminate antagonistic effects by hydrogen peroxide against AB cultures ( Rybka, 1994). S. thermophilus acting as an oxygen scavenger, creates an anaerobic environment and may enhance growth and survival of Bifidobacterium when used together in starter cultures ( Shankar & Davies, 1976; Rybka, 1994).
