Materials
Glutinous rice (RD6) was obtained from Khonkean province of Thailand and kept at 25 C prior to processing.
Fish powder was purchased from the Marine Pacific Company and stored in polyethylene bags in a refrigerator at 4 C. The composition of fish powder was comprised of approximately 77 g/100 g protein, 4 g/ 100 g fat, 3 g/100 g moisture content and 16 g/100 g ash.
The fish powder was derived from Lizard fish.
The hydrogenated palm olein oil was purchased from a local super market.
