While travelling in Indochina (Laos, Cambodia, Vietnam) one of the great food adventures is to witness and taste "colonial" hybrid dishes which take the best of French and Indochinese ingredients and recipes to produce winning combinations.
For instance breakfast in Vietnam through food stalls or vendors would inevitably be a baguette with la vache quirit cheese chicken liver pate coriander and a sprinkling of vinegar and fish sauce. Delicious!
Top it off with french pressed Vietnamese coffee from the hills of Dalat (one brand name you see often is Trung Nguyen an excellent bean with a chocolate flavor and smell!).
You'll see the french press in every street stall and almost every man wears a beret!
Another culinary adventure in Laos is to try the Luang Prabang salad its been so long I can't even tell you the exact ingredients but it was so superb we had it for every meal in the 4 days we were there!
