After inoculation, flask samples we

After inoculation, flask samples were transferred to a water
bath assembled to a CINAC (Cynetique d´ acidification, Ysebaert,
Frépillon, France) system that allowed continuously measuring
and recording the pH and evaluating the acidification rate along
each run. Batch fermentations were carried out in quadruplicate
at 42 C and stopped when the pH reached 4.5.
