Typical Chilean dishes are hearty and filling, containing a combination of meat or seafood and vegetables, oftentimes stuffed into a baked or fried crust. Empanadas are the perfect example of Chilean cuisine, as these fried beef, onion and olive dumplings are served throughout the country. A thick chicken, potato and pepper stew called cazuela de ave is another Chilean staple, as are humitas, an indigenous recipe of grated corn and fried onions ground into a paste and cooked in cornhusks. When the weather warms up, Chileans frequently dine on ensalda chilena, a fresh onion and tomato salad. Chile’s ample seafood supply is funneled into Spanish-inspired dishes such as paella or shrimp marinated in Chilean salsa.
