High relative humidity showed signi ficant bene fit to the consistency. So the water complementary method can provide the best overall sensory evaluation score, then the low flow rate and accelerated flow, in which the 6 schemes were not
significant different. This conclusion supported our hypothesis well about that high humidity is beneficial for improving the product uality. The high speed flow and decelerated flow schemes are not suggested unless high drying rate is required as the most important factor.
