In the drying industry,
the goal is to use a minimum amount of energy
for maximum moisture removal for the desired final
conditions of the product. If so, the quality and quantity
of energy as well as heat and mass transfer should be
investigated throughout the drying processes. In fact,
in order to find out the energy interactions, and thermodynamic
behaviour of drying air throughout a drying
chamber, the energy and exergy analyses of drying
process should be performed by employing the first and second laws of thermodynamics. Recently, many
studies covering mathematical modeling and kinetics
of the drying process have been undertaken by several
