In comparing the TTD data between matrices (Table 2), we
observed that for some microbes the conditions in specific foods
appeared quite optimal. When the differences in inocula levels are
equilibrated the TTDs are similar in both the laboratory media and
food for example with E. coli, C. tropicalis or S. aureus in bechamel
sauce. However, it is not possible to make any definitive comparisons
between growth rates in the different matrices from this
single TTD measurement
