Table 1 shows the evolution of the intracellular ice crystal in
Atlantic salmon fillets frozen by air-blast and pressure shift freezing during 6 months. Statistical analysis indicated that, for
the air-blast (−30 °C, 4 m/s) and pressure (100 MPa) shift
freezing, the evolution of the intracellular ice crystal is not
significant (Pb0.05) during storage.
