followed by the microfiltered juice. However, all three
juices had an acceptance of over 80%. The purchase
intention received grades in the region indicative of
approval and intention to consume the products
(‘would possibly purchase’ and ‘would definitely purchase’).
Finally, it was concluded that microfiltration is a
viable alternative to thermal processes in sugar cane
juice conservation, because there was an important
total flora reduction. The main advantages of this juice
are the use of milder temperatures resulting in lower
energy costs and the maintenance of nutritional characteristics.
