In this study, it was demonstrated that the improperly prepared
tuna dumpling stuffing with E. aerogenes contamination could lead
to production of hazardous levels of histamine over time when
stored at temperatures >25 C. At this short storage time in refrigerator,
even the contaminated tuna dumpling stuffing with histamine
formers, such as E. aerogenes, will not produce hazardous
levels of histamine to cause foodborne poisoning. Although histamine
was not detected in any frozen samples, it accumulated rapidly
in the previously frozen tuna dumpling stored at 25 C.
