Traditionally, dried brown rice is sun dried for
1 - 3 days to substantially reduce water content.
Although the sun drying method is cheap, there is a
risk of damage due to dust, microorganisms, insect
infection, poor color, and loss of nutrition (Ergüneş
and Tarhan, 2006; Esper and Mühlbauer, 1998). An
alternative to this is artificial drying.
