The himo or exterior mantle of blood cockle (akagai) is a highly prized delicacy, each precious shell having only one, and is somewhat of an unassuming favorite among sushi aficionados. Its brilliant scarlet color and agreeable texture harbor the distinctive salty tang and slight astringency-turned-sweet flavor of akagi, but in far greater concentration than the shellfish itself. Finely chopped cucumber and akagai himo make a superlative combination, the taste and texture of the blood cockle mantle future boosted the bracing flavor and mouth feel of the cucumber. The combination of red, green, black and white makes for an attractive roll that with a hint of wasabi becomes a stylish sushi choice adored by those in the know.
