Coskun [30] reported the mean yeast-mould counts in tarhana samples as 3.04 × 103, 3.52 × 103, and 3.37 × 101 cfu/g in Edirne, Kırklareli and Tekirdağ cities, respectively. Daglioglu et al. [31] found the mould/yeast contamination at a level of 1.5 × 103 cfu/g in traditional dried tarhana samples.
