Proteases of Neutrase, Alcalase, Flavorase, and Papain were
selected to hydrolyze the water-soluble protein from Se-BR in
accordance with their optimal conditions as recommended by
the manufacturer. The DHs of the four proteases were
13.94% ± 0.89%, 17.48% ± 0.74%, 6.38% ± 0.49%, and 7.46% ± 0.53%,
