Food safety is a fundamental concern of both consumers and the food industry, especially as
the number of reported cases of food-associated infections continues to increase and is rapidly
changing [1]. Listeria monocytogenes is an important food-borne pathogen due to the severity of
infection with a high mortality rate. This Gram-positive bacterium causes gastroenteritis and more
importantly listeriosis, a serious disease with high mortality in immune compromised people, unborn
children, and neonates.
