The objectives of this study were: (a) to investigate the susceptibility of E. coli and Listeria innocua to application of PL treatment, (b) to evaluate the role of product transparency on the effectiveness of PL treatments, (c) to assess the effect of posttreatment storage time on microbial populations, (d) to examine the effect of PL on selected chemical, physical and sensory aspects of quality in microbiologically acceptable treated products.
